Ingredients
- 750 g of Diari couscous
- 750 g of lamb meat
- 200 g of carrots
- 200 g of potatoes
- 200 g of turnip
- 200 g of pumpkin
- 200 g of zucchini
- 1 chopped onion
- 150 g of soaked chickpeas
- A cup of oil
- 1 tsp of harissa
- 2 tbsp of tomato concentrate
- 1/2 tsp of paprika
- 2 green chilli peppers
- Pepper, Salt
Preparation

- Mix the pieces of meat with salt and pepper
- Cut the vegetables into dices
- In the couscous maker, cook the meat in hot oil, the chopped onion, the chickpeas, the concentrated of tomato, the harissa and the paprika, mix, let simmer 10 mn then add the chopped vegetables with 1,5 liters of water, continue cooking

- In a bowl, add 5 spoons of oil to the semolina and ½ glass of water. Mix
- Put the couscous in the strainer of the couscous maker and let steam for 25 minutes
- Pour the couscous into a bowl and spray with some water, mix with fingers, then put it steaming again by stirring occasionally
- Before the cooking of the sauce about one hour
- Add potato and pumpkin in the sauce
- Fry salted peppers

- When everything is cooked, put the couscous in a container, add some butter or margarine, mix, then spray with the sauce (without vegetables) and mix again
- Put the couscous in a big traditional dish, decorate with vegetables, meat, chickpeas and fried hot peppers.
